VENETIAN JEWISH CUISINE, THEN & NOW | Third World Week of Italian Cuisine

On the occasion of the “Third World Week of Italian Cuisine”, a lecture on the Venetian Jewish culinary tradition and tastings of some typical dishes, by Susy Cesana Amram.

On the occasion of the World Week of Italian Cuisine, the Italian Cultural Institute in Haifa organizes an Italian kosher cuisine evening.
This year the event focuses on the typical Jewish cuisine of Venice, an intriguing fusion of three great Jewish cultures, which merged in Venice over the centuries: German (Ashkenazi), Italian and the Levantine (Sephardi).
After a brief introduction on the history of the Jewish cuisine of Venice, Susy will offer a few tastings of some traditional Venetian Jewish dishes, such as scacchi in brodo, the frisensal, mullet with raisins and pine nuts, rizi with almonds, and some typical cookies, such as bisse and zuccherini.

Susy Cesana Amram, born in Mestre (Venice), the first child of Renzo (Venice) and Tamara (Milan). At age 6 the family moved to Rome and Susy applied to the Jewish school in the capital. At age 20 she decided to move to Israel and attended the faculty of Biology at Bar Ilan University. The family moved only some years later. Today Susy works for the Italian Institute of Culture in Haifa as Italian, biology and chemistry teacher.
Since she was a child she loved cooking, especially cakes, bread, pizzas….In Italy she worked in a laboratory of venetian Jewish patisserie and directed a kosher catering .
Today she uses her culinary experience to offer her family some delicious dishes!
